is there a way to add some waypoint and/or POI?

on the watch i would then hope to have the option to customise a patch to show

how fare and Up to the next waypoint
how fare and Up to the endpoint
with the estimated time of arrival.

You cannot manage Suunto POIs in Routeplanner but you can add user waypoints along your route. You do that by tapping/clicking one of the planning points, the big white dots that are created every time you tap/click the map to create the route. From the popup menu then select ‘Name as waypoint’ and it will be converted into a waypoint visible on your route and during navigation.

For the watch data fields yes, all of those are available in Sport mode customization when creating a new sport mode.
